How can I edit the fits header information that is contained on my images?

What are you trying to change? If you’re just wanting to change things in general then I think you can change headers and add headers with PixInsight but I’m not 100% sure.

Astroshed FITS4Win2 to is also a good option. F4W2HDU (“FITS for Windows v2 Header Update utility”) is free and allows bulk update of FITS header information.
